For pve I'd say the estoc definitely, the better range and the horizantal slash on the one handed R2 will help a lot. For pvp it depends, the rapier has higher critical damage but the estoc has higher base damage, making it a better choice for turtling. Lothric Knight sword is very good. Estoc isn't as good as it used to be bit it's still decent. Pontiff curved sword is really good and doesn't need infusion. It's an absolutely top tier weapon on a quality build. If you know how to keep on your opponent while rollcatching and punish literally everything they do, then yes.
