Drakekeeper. Ultra. Greatsword. It's late-game, but it also has the best ultra greatsword moveset and scales exclusively with STR, not STR and DEX like sooo many others. It also weighs 2 units less then the stupid Greatsword that everybody always suggests and has a way better moveset. It is my absolutely favorite weapon of DS2.
It does amazing poise damage. It has bizarro-level reach AND can throw oponents off bridges and ledges. It flows seamlessly from the running/backstep R1, which is great for baiting in PVP.
